25g mung beans
50g honey rock sugar
1 piece pandan leaf
Wash mung beans and barley. Rinse and drain. Put water, mung beans and barley in a pot. Set aside. Cut the pumpkin in half. Remove the seeds. Peel the pumpkin. Cut the pumpkin into large pieces. Wash the pandan leaf, tear into strips and tie into a knot.
Put water (with mung beans and barley) to a boil. Add pumpkin. Lower the heat and cook for 10 minutes. Mash the pumpkin with a potato masher. Put the lid loosely on the pot and cook for another 20 minutes. Note: Keep an eye in case of overflow.
Add sugar and pandan leaf. Cook for another 10 minutes. Discard the pandan leaf. Serve hot.
