Red Bean Rice

Quick and easy red bean rice recipe. My family likes to eat rice and we eat rice at almost every meal. In addition to white rice, there are fried rice, multi-grain rice, five-grain rice, black rice, red bean rice, etc. I never knew that red beans can be cooked with rice before delving into cooking. In the past in Japan and Korea, red bean rice was only served to special guests or served on special occasions. Nowadays, many people view it as a highly nutritious dish that can be eaten frequently throughout the year. Cooking red bean rice is simple: just combine cooked red beans, red bean water and rice in a rice cooker and cook the rice as you normally do. Red bean rice has a natural slightly sweet flavor. Each grain of rice is plump and juicy. Suitable for all ages. My family loves it so much. They ask me to cook again and again. For the ratio of rice and red beans, I think 1 cup of rice to ⅓ cup of red beans is the best. You can adjust it to suit your own preferences. Soaking and cooking red beans take time. I usually cook this type of rice more than I need and store the leftover in the freezer for later use.

Instructions

Red Bean Rice Step 1Wash red beans. Soak the beans in water for at least 4 hours. Drain. Place the beans into a small pot. Add 2 cups of water and bring it to a boil. Lower the heat and simmer until the beans are softened, about 30 minutes. Remove from heat and let it cool. Separate the beans from the bean water.
 
 
 
 
 
 
Red Bean Rice Step 2Put rice into the rice cooker bowl. Rinse the rice once and drain. Add 1 cup of bean water and soak for 30 minutes. If the bean water is not enough, add water to make it 1 cup. Add more water (½ cup) if you like softer rice. Spread the beans on top of the rice. Place the bowl in the rice cooker and cook the rice as usual.
 
 
 
 
 
Red Bean Rice Step 3Once cooking is complete, the rice cooker will automatically switch to keep warm mode. Leave it for 10 minutes. Fluff the red bean rice. Sprinkle some roasted sesame or seaweed on top of the rice before serving or add some oil or salt in the rice before cooking if you like.
