Banana Cake Recipe

Yield: 1 serving (6 inch / 15cm round cake tin)
100g brown sugar
70g banana (without skin)
125g self-raising flour
[ Decoration ]
some banana slices
1 tsp icing sugar
Grease and line the cake tin. Sift the self-raising flour. In a bowl, mash the banana with a fork/potato masher until smooth.
Cream butter in a bowl. Add sugar and beat until fluffy. Add the egg in one by one and beat until incorporated. Add the mashed banana and mix well. Add self-raising flour and fold with a spatula.
Pour the batter into the cake tin. Tap the cake tin on table a few times to remove air bubbles. Put the banana slices on top as decoration.
Bake in preheated oven at 170°C for 50 minutes or until a skewer comes out clean. Leave to cool on a wire rack. Remove the banana cake from the mould. Dust some icing sugar on top.
