Mint Omelette Recipe
Mint Omelette is a very simple, common dish in Chinese family. We love to eat it with rice or porridge. This is a recipe from my Mom, and everytime she makes this, the plate will be emptied in no time.

1 tbsp soy sauce
20g mint leaves
20g cooking oil
Wash mint leaves and shake dry.
Crack the eggs into a bowl, add soy sauce and beat until well combined.
Add mint leaves and stir well. Set aside for later use.
Heat oil in a pan. Pour in the beaten eggs and fry until the bottom side is golden brown. Flip the omelette to pan fry the other side until cooked. Remove from heat and serve.
