1/4 tsp fine sea salt
1 Chinese sausage
20g cooking oil
Beat the eggs in a bowl. Add salt and mix well. Remove the Chinese sausage casing and cut diagonally into thin slices with a sharp knife.
Heat oil in a wok and sauté the Chinese sausage slices until fragrant.
Pour in the beaten eggs and fry until the bottom side is golden brown. Flip the omelette to pan fry the other side until cooked. Remove from heat and serve.
