40g cake flour
½tsp baking powder
20g almond powder
¼tsp vanilla extract
40g salted butter
Melt butter using a double boiler.
Pour vanilla extract into milk and stir well.
Sift the cake flour and baking powder together. Add almond powder and mix well.
Beat egg and sugar in a bowl until ribbon stage (thick and fluffy). Fold in flour mixture until 80% done. Add milk and vanilla extract. Add melted butter and fold until well combined.
Pour the batter into baking cups evenly. Tap the baking tray on table a few times to remove air bubbles. Bake in preheated oven at 180°C for 15 minutes. After having baked for about 12 minutes, you can rotate the baking tray to help the cupcake get cooked evenly.
