Husk the corn and remove the silk. Break the corn into half. Poke through the middle of the corn cob with a pair of closed sharp scissors, and twist it until the corn breaks apart.
Peel the kernels row by row with your hands. It takes some time, but we get all the kernels out nicely this way.
Note: Don’t throw away the cobs. We can use it to make stock for our soups.
Storage
You can freeze the corn kernels raw or cooked in airtight containers, freezer bags or vacuum-sealed bags. If properly stored, they will maintain best quality for 6 months to a year.
