Six Herbs Sweet Soup (a.k.a. six flavour sweet soup) is a popular Chinese dessert soup that has six Chinese dried herbs in it. The combination may vary here and there, and sometimes one or two more herbs are added.

Ingredients

15g dried fox nuts
30g barley
10g dried lily bulb
30g dried jujube (approx. 10 dried jujube)
25g red lotus seeds (in half & coreless)
15g dried longan
1500g hot water
150g white rock sugar

Instructions

Six Herbs Sweet Soup Step 1Soak snow fungus in cold water overnight or for at least 8 hours. After soaking, remove the hard parts, rinse and drain. Cut the snow fungus into small pieces with a pair of scissors.
 
 
 
 
 
 
 
Six Herbs Sweet Soup Step 2Put hot water in a slow cooker. Add everything except white rock sugar. Cover and cook (auto setting) for 2 hours, until everything is tender.

Tips: Cooking in a regular pot will take less time.
 
 
 
 
 
 
Six Herbs Sweet Soup Step 3Add white rock sugar and cook for another 5 minutes until the sugar dissolved. Serve hot or chilled.
 
 
 
 
 
 
 

Storage

You can divide the dessert soup into individual portions and pour them in airtight containers separately. Cover tightly and keep in the refrigerator. If properly stored, they will maintain best quality for up to 7 days.
